Preparation
Peel the tomatoes and once deseeded chop them and put them in a pan with a dash of oil, cover the pan and simmer over a gentle heat for 20 minutes. In the meanwhile cook the pasta and drain it al dente, toss it in a serving dish, add the mint and sprinkle with grated pecorino. Pour the tomato sauce over the pasta, mix again and leave it to rest before serving.
