Egg Garganelli with courgettes and pink pepper

  • 250 g Garganelli n° 115 all’uovo
  • 300 g courgettes
  • 1 onion
  • 1 small bunch chive
  • 1 clove garlic
  • 3 leaves mint
  • 1 tbsp pink pepper
  • salt

Trim and rinse the courgettes then slice them into fine strips.. Rinse the chive keep to sprigs aside and chop the rest; rinse the mint leaves and dry with a tea towel. Peel the onion and the garlic, rinse them and chop them finely then place them in a pan with heated oil and fry until soft. Add the courgettes, the chive, the mint, the pink pepper, a pinch of salt and black pepper and brown for 5-6 minutes. In the meanwhile cook the pasta in boiling salted water, drain it al dente, mix it with the sauce, sprinkle with the chop chive and serve immediately.
