Preparation
Cook the lobster plunging it a large saucepan with plenty of boiling water and a bit of salt for about 8 minutes; drain it and slit it lengthways, starting from the head intestinal thread; extract the pulp and chop it up.Peel the tomatoes and once deseeded chop them into bits. Place the peeled and chop the onion in a pan with a dash of oil and fry lightly, then add the parsley, the tomatoes and a pinch of salt.After 15 minutes add the lobster and flavour for 1-2 minutes. In the meanwhile cook the pasta and drain it al dente put it into a serving dish and toss it in the lobster sauce, mix well before serving it warm.
