Cook the pasta with plenty of boiling salted water. In the meanwhile mix the ricotta and the parmesan in a bowl. Place the warmed milk into a pan with 2 tbsp of the pasta's cooking water, a bit of cinnamon, salt and pepper.Mix well until a smoothly blended cream is obtained. Drain the pasta and mix it to the ricotta sauce immediately. Serve warm adding a last sprinkle of cinnamon.
