Trivelli milanese

  • 100 g fresh sausage
  • 1 sachet saffron
  • 100 g single cream
  • 3 tbsp grated Parmesan cheese
  • salt and pepper

Peel the sausage and once crumbled place it in a pan and brown briefly. Then drain it, remove the fat and then place the sausage in the pan again. Add the cream, the saffron and simmer for 3 minutes over a medium heat.Then season with salt and a grind of pepper. In the meanwhile cook the pasta in plenty of boiling salted water, drain it al dente and toss it in a serving dish and mix it with the sauce. Sprinkle with parmesan, mix and serve.
