Spaghetti Abruzzese with garlic, oil and chilli

  • 4 cloves garlic
  • 1 hot chilli, broken and deseeded
  • 3 pinches Italian parsley
  • salt
Spaghetti n° 12


Bring to the boil 7 litres of water, toss the pasta in it. While the pasta is cooking, place the garlic and the chilli in an iron pan and fry until almost blackened over a very low heat.Add the parsley and a ladle of the pasta's cooking water. Drain the pasta very al dente and toss it into the pan with the sauce, mix and serve immediately.
