Trivelli salad

  • 4 artichokes
  • 2 hardboiled eggs
  • 1 egg yolk
  • lemon juice, Italian parsley, salt and pepper

Clean the artichokes, place them in a bowl with lemon juice, blanch them briefly and slice them into strips. Prepare the mayonnaise with an egg yolk, oil, lemon and salt.Cook the pasta, drain it al dente and rinse it under running water. Season it with a drizzle of oil and a pinch of pepper and parsley, then add the artichokes and the sliced hardboiled, the mayonnaise and mix well.Place the pasta thus dressed in the fridge for at least a couple of hours before serving.
