Soup with courgette leaves

  • 4 basil leaves
  • 400 g new courgette leaves
  • 1 small onion
  • salt and pepper

Preparation

Clean and rinse the courgette leaves and slice coarsely; wash and sift the tomatoes.Heat the oil in a saucepan, add the basil, the onion and fry lightly for a few minutes then remove from the heat.Put a litre of water in a saucepan and bring to the boil; salt it, add the courgette leaves and, after 5 minutes, add the tomato sauce.Bring the water back to the boil toss the pasta and cook it al dente.Switch the heat off, add the chopped onion, a touch of pepper, mix well and serve.
