Clean the rocket, rinse it well a few times and drain it. Heat the oil in a pan, add the garlic and the chilli and brown, then remove both the chilli and the garlic, add the tomato, pressed with a fork. Season with a pinch of salt and let it reduce over a medium heat for 15 minutes.
Bring to the boil a pan with salted water, toss the rucola in it, stir, add the Penne and drain them al dente. Then pour the rocket with the pasta in the tomato sauce pan, sauté and serve sprinkling it with Parmesan.
