Clean the anchovies, removing head and bone, rinse the fillets and chop them into chunks. Peel the garlic and the onion, dry delicately and chop them. Trim the French beans, chop them into chunks and once rinsed blanch them for 3-4 minutes, drain them and keep aside.Heat the oil in a pan, add the garlic and onion and fry until soft but not golden. Add the French beans, sauté for 2-3 minutes, add the anchovies and simmer for 2 minutes, stirring gently with a wooden spoon; season with salt and a grind of pepper.Cook the pasta and drain it al dente, then mix it with the anchovies and French bean sauce.
