Zita with catalogna

Clean the catalogna, chop the stalks, keep the leaves aside, place them in a pan with cold water and bring to the boil then cook for 10 minutes from when it starts boiling again and drain them.Bring to the boil another pan with salted water and once boiling toss the catalogna leaves and cook for 10 minutes (this process will remove the typical bitter taste off the vegetables) in the meanwhile peel and chop the garlic cloves.Wash the tomatoes, peel them and once deseeded chop them; golden the garlic in a pan with a dash of oil, add the tomatoes season with a pinch of salt and a grind of pepper, cover the pan and simmer for 15 minutes over a high heat.Once the catalogna is almost cooked, toss the zite and cook them al dente then drain the pasta and pour it in a deep serving dish, mix with the sauce, mix well and serve warm adding a bit of grated pecorino to taste.
