Wholewheat Spaghetti with dried tomatoes

Preparation

Clean the parsley, dry it and slice it finely; chop the dried tomatoes, keeping a couple aside for garnishing; once peeled and rinsed, chop the garlic finely. Bring to the boil a large pan of salted water and toss the pasta in it. Then once al dente, drain it, keeping 3 tbsp of the pasta's cooking water and put it back in the pan used. Mix the pasta with olive oil, the dried tomatoes, the tomato sauce, the garlic and the chilli, season with salt and a grind of pepper and the cooking water.Sauté the pasta for a few minutes over a medium heat with a big fork. Toss in a serving dish, garnish with the whole dried tomatoes a pinch of chopped parsley and serve warm.
