Mafaldine with pesto and vegetables

  • 150 g French beans
  • 1 potato
  • 250 g pesto, already made

Trim the French beans, rinse them and chop them into bits. Peel the potato and slice it into sticks then put it in cold water to prevent it from blackening.Cook the pasta, the French beans and the potato in boiling salted water for 8 minutes. Pour the pesto in a bowl, add 2 or 3 tbsp of the pasta’s cooking water, mix carefully.Drain the pasta when al dente with the vegetables, mix it with the pesto and serve immediately.
