Squash the tomatoes and deseed them; place them in a pan with the chopped onion and a few leaves of basil and some salt and pepper.Simmer for 15 minutes and sieve in a vegetable mill. Pour this mix in a pan and simmer for 15 more minutes until the sauce thickens.In the meanwhile cook the pasta, drain it when al dente and mix it with this simple but tasty sauce, then sprinkle the mozzarella cubes, keeping aside a chunk of mozzarella, slice it and garnish the sides of the serving dish with the mozzarella slices and a few leaves of basil.
