Stuffed Paccheri

  • 300 g minced beef
  • 150 g sausage
  • 2 eggs
  • 6 tbsp grated Pecorino cheese
  • salt and pepper

Pre-cook the Paccheri Tricolore in a pot full of salted water. Drain and rinse in cold water, and leave to cool on a dishcloth.Peel the sausage and crumble the meat. Sauté the sausage and minced beef in 4 tablespoons of oil in a saucepan.Salt and pepper to taste and leave to cook for approx. 20 minutes, stirring and adding hot water from time to time.Once cooked, place the meat in a bowl; drain and sieve the resulting sauce then put aside in a separate container.Boil the eggs, then peel and chop them; mix in with the cooked meat and fill the pasta.Grease an oven tray with the remaining oil and lay out the pasta in layers alternated with the pecorino cheese; cover with the gravy.Place the tray in an oven pre-heated to 180 °C and bake for approx. 20 minutes. Remove and serve immediately.
