Egg Fettuccine with ham, peas and cream

  • 300 g Fettuccine n°103 all’uovo
  • 160 g cooked ham (2 slices)
  • 300 g fresh peas
  • 150 g single cream
  • 30 g Butter
  • salt

Shell the peas, rinse them then blanch them in a pan with plenty of boiling salted water. In the meanwhile, slice the ham into strips and flavour it in a pan with a knob of butter.Once the peas are cooked, drain them, mix them with the ham and flavour for 3 or 4 minutes, then add the cream and mix well to fold in the ingredients.In the meantime cook the fettuccine, drain well and mix them with the sauce, which will thick by now. Toss the fettuccine in the pan over the heat for a few more minutes then serve.
